Chocolate Coconut Muffins
You can skip the drive thru and make your own fresh, low carb muffins. Made with the Chocolate cake mix just add in unsweetened coconut and chopped nuts *optional sugar free chocolate chips
1 Chocolate Cake Mix
4 eggs beaten
1/3 cup butter
1/4 cup cream (or half cream half water)
2 t vanilla extract
1/4 cup unsweetened coconut
1/4 cup chopped nuts or seeds
Empty Cake mix, coconut and nuts into a bowl or stand up mixer.
Add in all wet ingredients. If the mix is too thick to scoop add a little extra water.
Mix well and scoop into 10 or 11 lined muffin tins. Use an icecream scoop.
Bake for 19 - 20 minutes at 350
