Chocolate Coffee Cake - Low Calorie

This is one of my favorites. Not only is this cake low carb, but it is also lower in calories. Very rich and chocolatey almost has a brownie consistency and it is so simple to make. 

Add the Chocolate Cake Mix to a stand up mixer or large bowl. Then add in all the wet ingredients. It is that simple. Mix well, the batter will be thick. 

The most difficult part of this recipe is getting the hang of working with a thick batter and smoothing it out into the pan. Dump the batter into a well greased 8 x 8 in non stick pan, prepared with spray. 

Now you will start to smooth the batter out with a spoon that is dipped in water. Keep a cup of water next to you. Don't worry about adding to much water just keep the spoon wet and smooth the batter out evenly. You want the cake to cook evenly so take the time to spread it out evenly.

Then you can sprinkle unsweetened coconut and sugar free chocolate chips on the top. Lightly press the coconut and chocolate into the cake. 

Bake at 350 for 30 minutes. Then enjoy.
