Chocolate Cream Cheese Icing

Try not to eat this all before it gets on your cake!!

1 250g pkg of cream cheese
1 cup whipping cream
3 T Stevia?Erythritol Blend
5 T Cocoa Powder 

This is so simple to make, yet has such a luxurious texture and taste.

Add the sweetener to your bullet blender and grind until it's fine powder, add the cocoa and blend together, then sift....don't skip sifting. 

In a stand up mixer blend softened cream cheese until it starts to get smooth, add sifted sweetener in 2 batches and continue to blend and scrape down bowl until the icing is nice and smooth and all the lumps are gone.

Slowly add in the whipping cream and beat until it starts to thicken. Be careful not to over beat. The consistency will be light and fluffy and easy to spread. 

This is a semi-sweet icing. Do not try to over sweeten your desserts. Use high quality ingredients and the sweetener will just enhance, not over power. 

This is enough to ice a small layer cake and still have a little left in the bowl for your kid:) or you:)
