This is such a quick and easy recipe. Adjust seasoning to taste.
1 large or 2 small cans of diced tomatoes
1/3 diced onion
1 stalk celery diced
1 medium carrot grated
1 large clove of garlic minced
1 T olive oil
3/4 c hot water with 1 chicken bouillon cube
1/2 T dried basil
1/2 t dried oregano
2 T dried parmesan
2 T sweetener (optional)
1/3 cup milk or cream
1. Sauté onions, celery, carrot and garlic in olive oil until soft.
2. Puree tomatoes in blender in two batches. Add sautéed vegetables to second batch. Purée until smooth.
3. Pour vegetables into large pot. Add the rest of the ingredients except for milk. Simmer for 15*20 minutes. **optional add bay leaf.
4. Turn off heat and add milk and serve.
