Harvest Seed Bread

1 pkg Seedy Buns Mix
4 eggs
.33 cup melted butter  or coconut oil -  I use a mix
.5 cup cream
1 T cider vinegar
*optional seeds for the top

Prepare a loaf pan with spray and with parchment paper. You can use a little extra parchment on the ends...I didn't find it necessary.

Preheat oven to 350 or 325 for convection oven. 

Empty Mix into a stand up mixer or bowl. Mix 4 eggs in a separate bowl.  Add eggs and melted butter to dry mix. Blend with electric mixer until dough starts to come together. Add 1 T of vinegar to cream (it will curdle) add to dough. Blend well until the dough starts to thicken, aprox. 2 minutes.  

Take the parchment paper out of the pan and lay flat on counter. Empty the contents of the the dough onto the parchment and shape into a nice loaf ( keep your hands wet and or use a little coconut flour) I shaped mine to look similar to the picture of the finished product - a little higher in the middle and tapering off at the ends. Sprinkle with seed or your choice. Fit your dough on the parchment back into your bread pan.

Bake for 65 - 70 minutes. The crust will be thick and a dark golden brown. 

This is a heavy dense but delicious bread for a fluffier bread make the seedy buns as per instructions on the back of the mix. So great toasted..Enjoy!
