Tex Mex Skillet

Make dinner and extra for leftovers. This is a super easy meal that can be made in under an hour. Make enough for another meal or two. 


Chicken Breasts 4
Olive Oil 2 T
Red and Yellow Peppers 3
Red Onion 1/2 
Can Black Organic Soy Beans 1/2 c
Can of Diced Chili Tomatoes 3./4 c
Taco Spice 2-3 T

Preheat oven to 350. Cut peppers and onions in half, place on baking tray, drizzle with oil. While peppers are roasting prepare chicken.

Cut chicken into strips and sauté in olive oil until brown. Add 3/4 cup diced tomatoes and juice with 2-3 T taco spice. Add in 1/2 cup of soy beans. Simmer for 15 minutes. 

When roasted vegetable are soft buy not mushy, slice and add to chicken skillet. Serve with riced cauliflower.
