Keto Buttermilk Biscuits Recipe

   

 

INGREDIENTS

  • 1 pkg. Cheesy Buns Mix
  • 1/3 cup melted butter
  • 3/4 cup liquid (1/3 cup cream fill to 3/4 c with water)
  • 2 t vinegar
  • 2 fresh eggs beaten
  • Optional - add some grated cheese, chives, bacon bits
  • or your favorite spices.
  • Instructions
  • Preheat oven to 375 degrees.Reduce to 350 before cooking the biscuits.
     
  • Mix vinegar into cream mixture let sit for a few minutes until thickened.
  • Pour dry mix into stand up mixer. Make a well in dry mix. Pour in melted butter and eggs. Mix until the dough starts to come together. Slowly add liquid until well combined. Add cheese and mix well.
  • Method 1 - Divide dough into 12 portions using an ice cream scoop. Drop onto baking sheet lined with with parchment. Even out cracks on top for a even looking finished product. 
  • Method 2 - You can also use the drop biscuit method; using a large spoonful drop into well greased muffin pan sprinkle with extra cheese. 
  • Reduce heat to 350 and bake for 17-18 minutes until the buns are just slightly turning a golden brown on the top and bottom.  
  • Cool completely then store in a airtight container and refrigerate for up to 5 days. Microwave buns for 15 seconds to soften.
  • Freeze buns for up to 2 months. Thaw at room temperature.
  • Makes 12 servings
