Keto Chocolate Chip Muffins Recipe


1 pkg. Chocolate Cake Mix
1 pkg  60 grams sugar free chocolate chips
1/3 cup melted fat (butter, lard, margarine)
1/2 cup milk or almond milk
1/2 cup water
2 fresh eggs


Preheat oven to 350 degrees or 325 for a convection oven.

Pour dry mix into stand up mixer. Melt butter and gently beat eggs. Make a well in the dry mix and pour in melted butter and eggs. Mix until the batter starts to come together. Slowly add liquid until well combined. Blend on high for 10 - 20 seconds. Scrape down sides andf old in chocolate chips.

Divide batter using an ice cream scoop into 12 lined muffin tins. 

Bake for 18 - 19 minutes at 350.
