Keto Cinnamon Donuts


1 pkg. Cinnamon Spice Muffin
1/4 cup melted coconut oil
3/4 cup liquid ( part cream/part water, almond milk)
2 eggs

3 T butter
3T erythritol
2 t cinnamon (or to taste)

Preheat oven to 350 degrees.

Pour dry mix into bow.. Melt 1/4 cup coconut oil and gently beat eggs. Make a well in the dry mix and pour in melted oil and eggs. Mix until the batter starts to come together. Slowly add liquid until well combined, but do not over mix. Blend on high for 10 - 20 seconds. 

Scrape down sides and spoon batter into a piping bag. Pipe evenly into a 12 count donut pan.  Fill the cavity for 10 large donuts. Make sure the pan is generously oiled.

Bake for aprox 17-18  minutes. Don't over cook. Loosen the donuts by edging with a knife, Let cool 5 minutes. Gently remove the donuts by edging with a knife until the donut releases easily. 

Mix cinnamon and sweetener in a bowl and set aside. Melt butter in microwave. Dip one side of the donut into the melted butter and then into the cinnamon mixture. Let the donuts dry for a few minutes then sprinkle plain erythritol on the top for a nice finish.
