Keto Buttermilk Biscuits

This is my favorite way to make the biscuits. The 'buttermilk' gives such a rich and moist texture. These are best when fresh from the oven. You can also use this recipe to make a biscuit topping for stew or chili. 

Total Carbohydrate - Fiber - Sugar Alcohol = 1 Net Carb

Ingredients:

  • 1 package Cheesy Biscuit Mix
  •  1/3 c melted butter
  • 3/4 c liquid (1/4 c cream, 3/4 c water 
  • 2 t vinegar
  • 2 fresh eggs slightly beaten
  • 1/4 to 1/2 cup grated cheese

Instructions:

  •   Preheat oven to 375 degrees. You will reduce the heat to 350 when you put
    the biscuits in the oven. The initial, extra heat will help the biscuits rise 
  •   Mix the vinegar into the cream, allow to sit for a couple of minutes until
    the mixture starts to thicken 
  •   Pour dry mix into bowl. Make a well in the mix. Pour in melted butter and and eggs. Start to mix and then slowly add the liquid until well combined. Add cheese and stir 
  •   Using an ice-cream scoop drop 12 portions onto a baking tray lined with parchment paper. You can also use the drop method - with a large spoon drop dough into 12 greased muffin trays. 
  •   Reduce heat to 350 degrees and bake for 17-19 minutes, until the biscuits are just starting to turn golden brown 
  •   Cool completely and then store in an airtight container and refriderate. 

    ** Hint - Reheat in microwave for 15 seconds to refresh
    ** Freeze for up to 2 mths
