Savory Shortbread
INGREDIENTS
1 pkg. Cheesy Buns Mix
1/2 cup cold butter cubed
1T Stevia/Erythritol Blend
2 t rosemary
Preheat oven to 350 degrees or 325 for a convection oven. Prepare a cookie sheet with parchment paper.
Pour dry mix, rosemary and stevia blend into stand up mixer. Add cubed butter and mix with a paddle attachment on low until the mix forms a crumb texture. Turn up the mixer until the mix forms into a cohesive ball.
Divide batter using a cookie scoop and then flatten with the bottom of glass, put a piece of parchment in between the glass and dough to avoid sticking.
Alternatively you could roll the dough between parchment paper and then use a cookie cutter.
You could also form the dough into a log and refrigerate until firm and then cut into rounds.
I find the cookie scoop method the fastest.
Bake for 9 minutes for small cookies. Makes aprox 34. The cookies should be golden on the bottom . Do not over cook, it should have a light texture.
Really low Carb, only 1 net carb each.
